OK...it was real wet on Long Island all day, but I had to get the pit going... I ventured out to Costco in the AM, picked up a boneless prime rib roast (about 7 lbs). Spent a half hour debating if I should get the bone in or out, and went with the boneless for ease of slicing and serving.
I followed Phi's Prime Rib recipe and cook instructions exactly as he calls for it.
Here are some of the prep pics with the rub after being marinaded and then the post cook pics along with some sides ( sweet potato casserole, a homemade spinach/cheese dip for tortilla chips that also got some shots with Manny's Pit Bull Revenge Hot Sauce I picked up at Rob's Grillin on the Bay contest, and a little appetizer of fresh mozzarrella and sopressta.
Prime rib tasted excellent. Flavor was killer. Could have taken it off a few minutes earlier and got it a little rarer in the center. Pulled it at 140-145 deg but it must have cooked up too high during the rest.
(Phil - Does it somewhat resemble what it should ?)
