How come it is no one told me about the joys of beef ribs? Seems like everyone gets caught up in the categories of competition que ... baby backs and spares, but the large and lonely beef rib gets ignored.

I was surprised to see that two giant slabs of the beef ribs were the same prices as one tiny rack of baby backs. I suppose that's because I'm sitting in the middle of beef country, but still. The flavor was unbelievable. I cooked them for about 6 hours and didn't foil them. Good thing, because after that 6 hours, the meat had pulled back from the bone far enough to give us nice handles for eating.

Good looking beef.

When I have looked at them in stores here, they all appear to have had the meaty parts scooped out by some sort of machine before the got packaged, so I thought farkem. I would buy some if they some meat on them.

Same here. It's almost impossible to find some meaty beef ribs. They are trimmed to where you can see the bones before they are cooked. I'd make them more often if it was worth the effort.

There is a butcher shop down here in Huntington called Beef Palace that sells the REAL ones. I have never tried them but saw them in the case last time I was there.

we just picked up 20lbs of em for Tonto. Restaurant Depot sells em between $2.40 - 2.89/lb., You get 4 racks of 3 bones in each.. we do em just like briskets, and one rack is a meal for 4. good stuff... think they may just be on this weeks menu.

We serve them as a special every now and then.
We have been calling them Brontosaurus ribs over two years now.
For those that don't know, they are not the same as those standard gleaned bones you find at the grocery.
They are actually the full beef short rib.
Normally you will find them cut into three or four inch sections.
