Default Double Decker Stuffed Pork Tenderloin

Experiment in progress....


Took a two pack of Pork Tenderloins and butterflied them both. Once opened up, I hit them with the Naturiffic Harvest Brine and wrapped them in plastic so they could hang in the fridge for a bit. (~6 hours)



Pounding it flat after buttlerflying it.




With the Harvest Brine applied




Here is where it gets a little crazy.

After they came out of their rest in the fridge, I covered the first layer with Marscapone Cheese.



On top of the Mascarpone went sliced apples and some homemade sweet Italian Sausage I had made a few weeks ago.
Basil was sprinkled over the whole thing, and then the other Pork Tenderloin went on top and received the same treatment.

Photo right before I rolled it.



Rolled and tied and seasoned with ground peppercorns and sea salt.



Tossed it on the Weber indirect mode with charcoal and a mini-split of Hickory.


Current situation




We shall see...

Apples and Pork are a great combo for sure. I have not stuffed anything with Mascarpone before, but there HAS to be a first time right?

These were really good. Wasn't much cheese after the fact, but it did seem to leave some flavor behind. The apples were killer in there as was the italian sausage.

I would do it again.

Looks fantastic, and very interesting with how the mascarpone did/not interact with the rest of it.

Wish we were a few 100 miles closer... looks delicious.
