It's been a while since I posted here, or have even been here. Got really big into SCA competitions, went to the Worlds twice in Ft. Worth and once to the World Food Championships in Alabama. Did alright. I have found that my heart is in backyard bbq and not comps. So, I'm back to learn more and experience new que. Curing bacon and a Ham from a pig I raised, never cured my own ham! Smoking ribs from said pig too and smoking a Turkey. It's always good to come back and read all these posts! Smoke on people!!
