Arrrgggghhhh... I doubt there's any sign of life left in the Noobian ranks after that direct hit by Smokin Bill. Great shot matey!!!

To add insult to injury, Yeoman No Class Mongo Czervik will pile on with another barrage. With special inspiration from Secret Agent Cowgirl and Lt. Gore, I present Mongo's Pulled Chuckie Stuffed Poblano Soufflé.

A while back I bought a 26 pound sliced chuck roll. I divided it up into 5 portions and vacu-sucked/froze them for later use. Here are two of them I seasoned up with a smoked chipotle rub ready to go on the smoker. No pics of the finished cook, but suffice it to say it was ten pounds of tasty goodness. After eating a bunch for a couple days, we ended up with about one pound left which I froze again for later use.

Fast forward to yesterday... Fresh tomatoes and peppers from my garden, plus a sweet onion and some salsa mix.

Fresh salsa...

Now on to the main dish. Pulled chuckie, garden poblanos, roasted garlic, roasted anaheims and a Mexican cheese blend...

I steamed, seeded and did a little surgery on the poblanos...

Stuffed with the beef, garlic, peppers and cheese...

Tops back on and into the CI skillet on half the batter of 8 egg whites whipped with 8 tbs of flour and 8 yokes folded back in.

Topped with the rest of the batter and some rub...

On to the Traeger at 325...

And 45 minutes later all done...

Here we have the finished meal; two slices topped with the home made salsa and some more cheese, shown in front of the latest weapons used for home protection...

A little closer (money shot)...

And no cook is complete without a fork shot...


If thar be anythin' left o' t' Noobian horde after those two blasts, I call on t' rest o' t' Farkanaut crew t' send them t' Davey Jones locker. Arrggghhh...

I keep looking at the picture, and even turned my monitor up-side-down.... Nope, no inspiration from my end, that's for sure. That looks 100% cowgirl to me.

Al, that poblano souffle looks fantastic, what a great idea! I missed Cowgirl's inspiration for it so thank you for the echo. I could go for a slice of that now, great execution!

As I approach the SS Farkunaunt I see plablano peppers flying overboard landing in the water making small splashes and what's that is that toast diving off the flank that's hanng off the port side? oh well I ready my bomb to deploy the flinal shot in this dreadful battle.

As the crew creeps along they ready the 116# pig with and injection of apple juice home made rub apple cider vinegar and a little water.

we load the pig in the smoker at 250* for five hours them we take a peak to check for a good color on the outside of this massive bomb. YES LOOKING GOOD!!!!

now after 20 hours at 250* it is finally ready to deploy. (please use this Pic)and it is time.

BOOOMM!!! the war is over.

We had a blast this past weekend cooking for our American Legion Post 433. Everyone there is like family (heck some of them are) and a bunch of good people. If you haven't thank a veteran of the military latley please do so and if you are a vertean My family and I would like to say THANK YOU!!! for your service!
