I couldn't get pics of today's pastrami or pig candy but I was able to get pics of the ribs. I've been experimenting with a new rub. What do you think of the color?

They look just fine!

If I'm not mistaken... A bit lighter in color than the ribs I got at the Torrance FM last year.

We actually had an Aussie come in to day and buy about $200 worth of meat including two of those racks. He loved it!

Probably lighter and redder.
