Pig Candy!
I hadn't made this in a while, and wanted to practice up on it.
Went to the local butcher and got thick cut bacon. Laid the bacon out an covered it in brown sugar & ghost pepper salt Put it on indirect on the Weber with Best of the West lump When the bacon was crispy on the ends, I flipped the bacon and coated with maple syrup... The bacon is done, just need to let the syrup glaze set. Dang! looks like I let the ends get a little over cooked. Guess I need more practice.

Looks great - people go farking crazy for that stuff! Have you tried adding a little ginger in there? Got the idea from mmmmeat - it's fanfarkingtastic. The ghost pepper will get yer attention - great stuff!

I could never avoid burning with brown sugar. Just switched to Turbonada and it works much better for me. Good Job--thanks. TIM

I'd eat most of that in one sitting!
On the subject of ghost pepper salt, down here in Texas we have this native plant called a chili tepin. I naturally dry the peppers for several weeks to a month, then grind it up in the spice coffee grinder with kosher salt. We just call it hot salt, and it's really good on everything from eggs to pizza to chili. Luckily I have several friends with lots of the plants growing wild in their yard, so I can get as much as I need for free. Last year's score with a few air dried serranos and one jap added to the mix:
