They probed tinder but was tuff when pulling. The fat had the consistency of a big snot ball. Thanks everyone for the kind words. I have a ton of pork in the refrigerator now. Next is a brisket on Saturday with pron to follow.

Wow, that's a beautiful smoker, congratulations!
Beef cheeks are a tough cut to get right, looks like all the other stuff was a home-run though!

It all looks great! Congratulations on the new smoker!


I simmer or braise beef cheeks, shred the meat, remove the fat and icky stuff. Then keep bags of beef cheek meat in the freezer for quick taco meals...the meat is rich...bout like rib meat only better.
