Doing my annual friends and family Christmas Rib cook this weekend. Normally, before vac sealing and freezing, I chill the ribs in a cooler full of ice water. But I noticed it's going to top out this weekend around 20 degrees. So was wondering if I wrapped them loosely in foil (or in a tented pan) and left them on our patio table, would the cold weather actually chill them faster than ice water? Not to sound (too) lazy, but I can't say that I'm exactly thrilled w/ the prospect of messing w/ a cooler full of ice water in a garage that's only going to be a few degrees warmer than it is outside... so thought I'd try something different!

It would definitely chill them, but I don't think it would be quicker than the ice water. Water transfers heat better than air, so it will chill it faster. That's not to say that putting them outside wouldn't chill them fast enough...just not as quick as the ice water bath.
