Bone in Lamb Shoulder

Took my remaining shoulder from the lamb we bought

slathered with a paste made from garlic, k salt, EVOO, and then hit it with some fresh cracked pepper

let it get happy for a bit while I got the OTG going with some RO lump, and an apple branch. put it on there with a drip pan below with some sliced onions and water.

let it go until it was almost probe tender, and chopped up some root veggies and garlic

parked the lamb on top of it until it was probing tender all over

let it rest while the veggies finished up.

made some gravy from the drippings. shredded the shoulder up

This came out fantastic! probably the best lamb I've done yet :whoo:
 
Very nice. Luscious looking. I need to try that.
I love lamb, but most of my family, not so much.
This might change them.
