Default Sunday Pork Butt

Tried to cook some sliced pork butt today. It wasn't a total success, but not a total failure either. Some portions were too tender for slicing and other sections were a little tougher than I would have liked. The best part was that I butterflied the butt a little bit and the extra surface area really helped to make some nice bark! Overall, it was still very good. One of my neighbors really liked it. He said it was one of my better butts (don't go there!)

Anyway, here a photo of just before I'm getting ready to slice it. The bowl on the left is the juices that were reserved from what was in the foil. Oh yeah, cooked it until it was at 160*, foiled until 180*, pulled and put it in a cold oven for an hour (best indoor cooler ever mod ).

In an omelet with BBQ sauce drizzled over the top!!
Use some of the foil juices and a bit of the grease to fry up some hash browns!
