Finally, Tri-Tip here in NY
I finally found Tri-Tip in a local market here in The Beautiful Hudson Valley of New York! Adam's Fairacre Farms has been carrying Hereford Beef lately, and one of the cuts they've recently introduced to their lineup is Tri-Tip. I've been dying too try it, so here goes!
Seasoned with some garlic salt, black pepper and Obi Cue - Smooth Moove Got the BGE going at about 650 degrees About 2 minutes on the first side with all the vents wide open. The flipped it over and closed all the vents tight. This brings the temperature down to about 300 degrees very quickly. After about 15 minutes, the internal temperature is 125 degrees. Time to come in for a rest on the cutting board. Perfect! This is a really flavorful cut of meat, destined to be a new favorite around here! I served it with creamed spinach and an iceberg salad. Bon Apetit!

Looks great. Careful when you close all the vents on the BGE after going to 650°, then open it again. Flashback could have your arm (or nose) as pink as the center of that tri-tip.
