Default Want to see if my pricing is in line.

I have a client wanting a price for 100-150 guest for a rehersal dinner. I will have about an hour drive one way and will be maintaining the buffet. They are wanting pulled pork, beef brisket and ribs along with four sides. Just wondering what you would price this at. I'll post what I am thinking of quoting it at after you all chime in. Thanks

I would charge around $12 to $14 per head for a spread like that

Depends how you look at it I guess, or if you want to blow out the cost side and have a bunch of leftovers.

Let's take ribs: somebody tells me they want ribs for 150 people I plan on cooking enough racks so each person can have a 1/2 rack. They tell me they want pulled pork and ribs for 150 people I plan on cooking enough racks so everyone can have 1/4 rack alongside whatever size portion of pork you decide on.

This is part of the reason I am wary when people ask for buffet style. Now I know the response you guys are probably thinking: well of course dummy, cook enough ribs for 75 people, enough pork for 75 people, etc. Not everybody is going to eat each selection. Seems good in theory but then try explaining to the client why you are out of ribs half way through his party and he's saying "Dude, I told you 150 people."

I do consider what you are saying HandsomeSwede and that is probably why I price higher than some. I was figuring on 4oz of pulled pork, 4oz of brisket and 3 to 4 bones per guest. and tell them that is how I am pricing it. I priced it to them at $22.50 per person for the 3 meats and 4 sides. We'll see, thanks for the input.

Ribs at the rehearsal dinner...must not be black tie. I think $19 per person plus extra $150 for your drive time and service time, with the understanding that a more definite person count must be set. A 50 person swing is way to big. Good luck and I hope you get the gig and you make money.

Not necessarily. I think what he's asking is will everyone get all 3 meats or will they get a choice of 1 of the 3.

Yes they are not getting a choice of 3 meats but can have all 3 if they want.

It's a rehearsal...not the actual wedding.

So...to the OP and his question:

Poster from Maryland would charge $xx per person.

Poster from Illinois would charge $xxx per person.

Poster from Wisconsin would charge $Xxy per person.

Poster from Georgia would charge $z per person.

A question like this asked to people who live all across the country will not garner you much in the way of a useful answer. Pork butts may cost one person $1.10 per pound an another person $2.50 per pound. Briskets may cost $1.85 per pound or $3.25 per pound. Your food cost will determine what your price is...not considering the hour drive.

Instead of asking "what would you charge for a meal like this" you should focus on learning the basics of food costing/pricing. After that, you'll never have to ask anyone ever again what "they" would charge.

While I see your point I figured it at $22.50pp and most all said they would have quote it at $18-$24pp so I was pretty close to middle of what the input I got from posts here. Now if everyone would say $13 for instance then I could figure out where I am going wrong and correct it. Perhaps I would have been too high and I was paying XXX for something and someone on here new a way I could get it for xx then with their help I could get my price with in an acceptable range. I'll take all the help I can get, thanks...
