At the last minute, I remembered that I was going to do a test smoke for beef barbacoa:


Chuck rubbed with salt, then a chili sauce made from New Mexico, Chipotle, and Guajillo chiles, garlic, and onion.

Nobody talks about it, but there is a lot of cleaning up to do afterwards...


We took in $1,400 in donations for an ala carte menu that included pulled pork, shredded chicken, sausage, slaw, beans, greens, and dessert.

@Czarbecue-I use the A1 Competition Smoker from Custom Pits in Watkinsville, GA.
Day 2, I put some of the barbacoa on the griddle with a little ancho chili powder, scrambled a few eggs and put the mess in a tortilla with some homemade salsa.
