Finally had my camera when I was cooking....I didn't cook this on my weber or smoker but in my weber gas grill....I do this frequently because we aren't technically allowed smokers or charcoal grills at my apartment so I just put wood chunks in my gas grill haha. I used oak and a little bit of hickory, it turned out so good, one of the better tri-tips I've done in a while.

No propane here in this propane grill....

you said no propane in his grill. Did you actually cook this roast only using wood???

Yea I cooked the tri-tip just using wood, I lit the wood with the propane then cooked it in direct till it hit 130 then gave it a good sear over the oak.

The mac n cheese is really simple, just make a roux (google if you don't know how but it's super easy), add milk (I add salt and pepper after adding the milk) let the milk heat up over about medium or medium/low, then add a hefty amount of Tilamook Extra Sharp WHITE Cheddar and let it all melt down @ about medium heat then add to the pasta of your choice. The Extra Sharp White Cheddar is what makes people love it so much, everytime I BBQ people plead that I make it haha.

And as far as resting, I let it rest about 8 minutes, I had a bunch of hungry people waiting including me, I could have let it rest longer but I don't let tri-tip rest longer then 10-12 minutes regularly anyway.

Oh and I have a watermark on my photos cause I am a professional photographer and it's just an action I have set up in photoshop for all my photos, I don't try to get the best photos I can with food stuff....I do it all day at work so when I come home taking photos is not on the top of my list haha.
 
You nailed it! Beautiful color in the middle, I bet it tasted fantastic.
 
Is tri-tip a Yankee thing? I've never heard of it here in Arkansas.... Looks good tho!
