Full Fledged Farker
After seeing everyone here doing wings, I just had to do some of my own.
Started with this. All I could find that day.
Gave them a good rinse.
Patted them dry.
Into a bath of EVOO and 2 different rubs. Let them sit in the fridge for an hour.

Ready for the Performer.
KB and a decent sized chunk of cherry that was burnt in yesterdays cook for the fire. Held steady ~300 for most of the cook. After about 45 min I went out to check the temp and it was reading 375*. :doh:
No worries. Closed the vents a little and it came right back to a steady 300*
After an hour I spritzed with EVOO and dusted on a little more rub then flipped. Another hour went by and I spritzed the other side and lightly dusted. Gave it about 5 more min and pulled them.
Conclusion -The HDD wings were VERY WARM but bearable. Them are the only ones I ate. Wife had the Bovine. She said they were good.
All in all a great experience. These will become one of my regulars.
