UDS Turkey

Plan to do a practice turkey on my UDS.
I'm going to spatchcock, brine, brush with EVOO then rub with
Cavenders Greek seasoning.

I've seen several done on this forum in a pan instead of directly on the grate.
Should I put it in a pan or on the grate?

I believe the pan is under turkey (lower) rather than turkey in.
 
Thanks for the replies. I think that the ones that I saw in the pans might be there to collect the juices for gravy.

Sometime in the next two weeks, I too plan to do a trial run on a turkey. I've been asked to smoke "the" turkey for Thanksgiving this year:shock:.

Mom, who is one of the best country cooks by the way, always cooks a turkey each year, is having knee replacement surgery just before Thanksgiving...
