I did some last week but not on a plank, slow smoked it around 200/225 it was awesome.

Very nice.... My plank caught on fire. Guess I had it to hot... Salmon was still great tho.

I have planked a couple slabs of red snapper over the last couple of weeks and the trick for me was to get the grate temp under 350. The planks received a nice char but never caught fire. If at first you don't succeed try, try again. Good luck!

Ya, pretty basic. If the plank catches on fire, the heat source is too hot. Medium heat is the trick.
