Knows what a fatty is.
Today I'm cooking a 7.5lb pork butt. I prefer HNF. After I built my fire I placed my butt in the cooker, and away we went. Since my door thermometer went kaput I've been using a two probe digital. Today I've been having a horrible time keeping temps up until I just noticed my meat was touching the probe:doh::doh::doh::doh:! After a quick reposition my temps have now sky rocketed over 350*. Got to love it when a plan comes together.
