Put together a Beef Wellington for the family.

We had sides of Fingerling Potatoes, braised Baby Carrots, and
Salad.

SMOKE FREAK:

I've cooked Beef Wellington many times and its actually very easy to do.
SPC provided a link that shows Gordon Ramsey's approach to the dish which will help you a lot if you want to give it a try.

My only advise would be is to make sure the Duxelles mixture has cooked most of the water out of it so the pastry does not become mushy. I also would not over stuff with the mixture.
