Crispy? I love crispy.
Maybe some bbq fish skin nibs or charred okra for this one.

No, no, no ... Fish nibs and okra chips are not allowed. You have to submit FOOD for this throwdown: Nachos, crisp bacon, even pork butts cooked to 300*, and I'm ok with pig skins, but no crunchy fishy okra thingies.

I suppose you could make the eggplant skin crispy. I shudder to think of any attempt to make the meat crispy.

Sounds like a challenge to me. Maybe another fish, Okra, and eggplant trio?

Hmmmm...eggplant. Mandoline. Deep skillet on the kettle. Lotsa oil at 375 or so. Yep, I think I could make eggplant crispy.

Crispy on the outside, but still slimy and mushy on the inside. It isn't the eggplant that is crispy in this dish...

I know what I want to do...the question is whether or not I get the chance to do it. And maybe also a little bit of whether or not I can actually make it right.

OK I just checked the rules and I think I can do this one. (It didn't say it has to be edible) I have had great success at making food crispy.
