I work with some guys from central American they do pork in the oven marinated with mojo. Then cube it and fry till crisp, I'm sure it will work in the smoker.

Mojo-marinated pork or tacos al pastor. Both are delicious and easy.

I've done carnitas on the WSM before. It is not authentic Mexican, but it tastes really good.

Pulled chucky would make good tacos. You can make tacos out of darn near anything from beef, to pork to seafood. But, get some good Mexican cheese, like Queso Fresco or Panela, instead of the normal American Jack or Cheddar. They have WAY more flavor.
