• Bacon Chicken Pops & Beef Marrow.
Hey Guys! I've had a recipe in my head for Bacon chicken pops that I've wanted to try out for a while. We have an event coming up where we want to serve these, so I gave them a go. Got some bones this week so I threw them on as well. Been having cravings and I haven't done them in a while! Figured I might as well!
Here's what went down. Started with the chicken by lollipopping them and removing the pin bones then seasoned. Then I dealt with the bones: Here's how I do the topping for the marrow. Very simple actually. It's just parsley, shallots, garlic, some scotch bonnet, basil, lime juice, good salt and EVOO cut up and combined. Got the chicken and bones on the grill smoking away. So here's my secret weapon: While that was going on I cut up some bacon and browned in a frying pan. Once that was done I added Brown sugar seasoned with cayenne and a bit of my rub. Got some toast going: Seared & sauced the chicken Then came the final touch. A generous sprinkle of the candied bacon! And time to serve! And the marrow was perfect... Marrow is definitely not one of those everyday meals. But it's one of the most amazing big small meals ever! OH and the chicken was the chit! Definitely on the menu! Thanks for looking guys! Cheers.

That looks amazing. Bone marrow is one of my favorites! I like the idea of the candied bacon sprinkle. I'm going to have to try it.
