Default Breakfast Muffins

Was cruising through Pinterest when I came across an image for breakfast muffins. Only these were not your typical muffins, so I had to try them.

First I shredded a russett potato, added an egg, salt and pepper and about a tablespoon of flour. I then took the mixture and pressed it into 3 silicone muffin cups in a large muffin pan.



Since there are three of us in the household it was enough for 3 muffins.




Popped it into the oven to bake for about 30 minutes, then added in some crumbed bacon and some sharp cheddar cheese and threw it back into the oven to melt the cheese.



Fresh out of the muffin cup and ready for topping.



The filling for the muffin came in the form of scrambled eggs. Topped with some chives and it was ready for the eating.

They were very tasty and only about 350 calories with 1 slice of bacon and about a half ounce of cheese.

Really great idea... I love taking familiar items and presenting them in a unique manner. Tasty looking scrambled eggs. Would probably try it with brisket instead of bacon and drizzled with a bbq sauce/maple syrup reduction
