Default French dips

Been craving some roast and found an eye of round roast in the freezer so yanked him out and hit it with SPOGOS and killer hogs steak seasoning and let it sit until the M1 was fired up.

M1 cruised at 280-290 on oak logs until about 115 internal...then cranked up to 350 for the last 10 degrees and pulled at 125

Into the fridge for a couple of hours and then broke out the slicer (pita to clean so it doesn’t get used often, but it’s perfect for this)

Almost didn’t get a plated pic as they went so fast...sorry the sloppy pic...these were on time...perfect smoke flavor and seasoning was great. I am liking Spogos recently

Thanks for looking and stay safe and healthy

Thanks all. I’ve made this several times before on the pellet cookers and this one was the best. The M1 is just so easy to run and burns so cleanly. I’m definitely digging it

Used the juices from the roast after resting and combined with better than bullion stuff.
