Default Smoked Knuckles

About 20# worth, cut up rib trimmings
from 9 slabs I cooked back on the
Fourth. Looked like freezer burn was
starting to set in , so I decided to
cook them up so as to not loose
them to the freezer. Well my wife
believed me anyway.

A lot of folks I have met around
here call these rib tips knuckles.
They are quite good if properly prepared.


Smoking at a slightly higher temp. aroun 300*

No rub on these, just Sonny's Sweet sauce, wife can't take the spices.

Off the smoker and in the pan.

Now it's my turn, seasoned with my own rub.

On the Smoker

I thought knuckles ment the beef peeled knuckles. I've cooked a few of them that turned out great for French dips and sammieies

Huh.... I thought maybe someone else besides me smoked their knuckles while trying to retrieve part of a chimney full of hot coals that "missed" the fire ring while refueling the cooker. Smoked my knuckles and singed the hair on the back of my hand!
