I thawed this out when I was cleaning out my freezer this week. Went with a simple rub, cooked hot on the PK, and then moved to the top rack and covered in bleu cheese. It formed a great salty crust.
Some folks don't like to mess with steak in terms of adding things to it (which I get), but I love the times I've had either the blue cheese crust or what I've had more which is a blue cheese sauce of some sort. Just amazing.
