Default Fajita Marinade and some Pron

I made the traditional Easter meal for dinner tonight....Fajitas! Ok, not traditional but d*** good.

I marinated a flank steak and veggies in my fajita marinade for 2 hours. I kept 2 Tbsp of the marinade out for a sauce.

1/4 cup Oil
1/4 cup Lime Juice
1/4 cup Tequila
1-2 clove Garlic minced
1 1/2 teaspoon Season salt
1 1/2 teaspoon Oregano
1 1/2 teaspoon Cumin
1/2 teaspoon Chili powder
1/2 teaspoon Paprika
1/2 teaspoon Red pepper flakes

I grilled the steaks on the Big Green Egg at 500f for 4 minutes a side and then flipped for another minute per side. I put the marinade veggies on the Craycourt griddle insert during the last two minutes.



I mixed the 2 Tbsp of the marinade with about 1/2 cup of sour cream to make the finishing sauce. The flavor of this sauce was kick butt. I could eat it straight!

You should enter that in the cast iron throwdown (I'm assuming that's a cast iron grill grate) Those pics look like they could be magazine ads

I love the sauce idea. Gonna have to give that a whirl.

THANKS! I totally forgot about that. Yes it is cast iron. It's a grate produced by another Brethren, Rolf.
