Default Some Jalapeno Cornbread Stuffed Chops ~n~ Peach Cobbler on the Drum

Not sure what to say... I know I make these too often. They're one of my favorites.

Quick cured the chops for 2 hours with tenderquick. 1 TBS of TQ per pound of meat.





baked a skillet of jalapeno cornbread...(minced onions, jalapenos and whole corn kernels added)



the cornbread, melted butter, chicken stock and cracked black pepper..



Stuffed chops into the BPS drum...(rinse the cure from chops before stuffing)



combined sliced peaches with sugar, cinnamon, cornstarch and lemon juice..



into the drum to heat until bubbly..





when the peaches were hot and bubbly I added the topping, sprinkle with cinnamon sugar...let it cook til light brown.

combined 2 cups of flour with
2 TBs sugar
3 tsp baking powder
1 tsp of salt
and 6 TBs of shortening
Mixed well then added
1 cup of milk



The jalapeno cornbread stuffed chops with fried green tomatoes...





and the cobbler...



with ice cream and a sprinkle of nutmeg...



It was kinda tasty!

In Feb 2011 I decided to go no flour no sugar no processed foods. It helped me go from 295 to 225.

I just gained 16# looking at this fantastic feast.
I've got to close now and loosen the top button.

Ice cream and corn bread its been so long.
