I still recommend getting a Maverick, but I have an egg as well and only see about 10-20 degree difference between grate and dome on mine. Hardly enough to really matter. Sounds like they just need to cook longer.

I screwed up my first 8 or so rib cooks. I tried everyway imaginable and couldn't get the right. Finally got an accurate digital thermometer and simplified the process and now the ribs are getting better each cook.
