Padawan scored some meat in Denmark recently,yesterday we cooked up a leg of lamb.
I marinated it overnight in a paste of garlic,habanero,laos,parsley,cumin,cane sugar,salt,pepper,olive oil,L&P,chardonnay,apple juice.

For starters we had smoked Greek cheese wrapped in bacon topped of with a sticky honey/pistachio/red pepper sauce.

For dessert we had smoked pineapple with rhubarb,pistachio sauce and honeycomb.
There's a bit of mint leaves and red pepper on top.

Smoked with willow.

Dennessey also dropped by real quick...he didn't stay for dinner cause he allready ate by that time.

Dinner didn't suck yesterday!:becky::cool:

Wow Phu, that is a spectacular meal. The lamb is perfect, and I love that honey touch in the dessert!
 
I'd love to hear the details on the pineapple :)

The pineapple is just smoked.:becky:
Smoked the Stroh rum drunken rhubarb untill soft,transfered it into an aluminium container with butter and sugar and cooked some more.
Grinded it with the Braun stick mixer.
We put the rhubarb in the middle of the pineapple.
Cooked some honey with chardonnay,ground pistachio,red (spicey) pepper and sprinkled some around the pineapple.
There are some berries on there with red (spicey) pepper,mint leaves and honeycomb.
