Had some left over chicken breasts that I smoked up in the UDS last night so I whipped up some smokey chicken salad. Mostly chunks, but some finely chopped to give a mix of consistency. Celery, red onion, red grapes, tarragon, pepper, & only a pinch of kosher salt. (I didn't want to overdo it because of the sodium in the rub). Mix it all together with some mayo & let it sit in the fridge till dinner. :grin:
