Tri Tip Question
I bought a tri-tip at a local butcher I don't get to much on Saturday. $10.99 a pound, and when I unwrapped it I found it had a fat cap like a brisket. In a 2.6 pound piece I had over half a pound of fat. Kind of ticked me off, as all the other ones I have bought around here at $8-10 a pound have been trimmed.
How do they come where you are, and for how much? I wrote them a polite email asking about it to see if it was an oversight on their part and they have not answered, which is disappointing.

Depends on the Grocery Store. WINCO by my house leaves the fat cap on and always wraps it in the tray meat side up so you can't see how much fat is on the bottom. Safeway does a much better job trimming Tri-Tip with some fat remaining, but not the huge fat cap.
Unfortunately, I know exactly what you are describing! Tri-Tip runs from $4.99 per pound to $6.99 per pound in my area.

The bulk packs I buy have the fat caps on 25 pound + packs $3.59 a pound. Trimmed runs anywhere from $4.99 $6.50 a pound.
Was your local butcher wearing a gun and a mask?

Out in SoCal, most of the tri-tips are trimmed, though sometimes Von's sells them on sale untrimmed. For me, I like about 1/4 inch of fat on TriTips...

I just bought a couple 2 weeks ago in coumbus oh on sale for 4.50/lb trimmed,choice. Reg price was 8.99/lb but thet was bogo free.... i think normal price here is 6-8 bucks a pound.

Tri Tip Question
Untrimmed are $2.99/lb here
Trimmed are $3.50-$4.99lb typically I prefer untrimmed when I am cooking them low and slow or on the Rotisserie. Trimmed for a quick dinner on the Kettle

$2.98/lb untrimmed, $3.98-$5.98/lb for trimmed. I bought it both ways and weighed it out. Came out pretty close. I like the untrimmed, as I will cut the fat cap off to remove an silver skin and then drape the fat cap back over the top while cooking low and slow. Remove the fat and throw away, then sear for 1 min each side to finish off. If I am going to grill it I just lose the fat cap altogether. One of my favorite things about Tri-Tip is the versatility. It is very good when you slice it all up, marinate it and fry it up on the blackstone for street tacos as well.

$10.99# for untrimmed tri-tip is robbery IMO.
I've bought the Creekstone Farms $69 special and was not impressed. Way too much gristle for my liking.

We get them from Stehlins.
I'm guessing they would be classified as trimmed, because I've never had to cut off much fat at all. My wife says that a 2.5-3 pounder usually runs from around $17 to around $24 or $25 or so, depending if they're on sale or not. It's funny how just a few miles away, Langens charges about half again as much for the same thing.

I prefer untrimmed tri tips. Usually cook them on a open pit with oak and leave the fat on. But they must be proud as hell of that meat to charge 10 bucks a pound.
