Spares and beans on the campfire

I gotta find me a lake cause that looks like fun. The ribs and beans look fantastic Jeanie. :thumb:

I don't use my firepit for cooking often enough. I need to try some chili and jambalaya on it this fall.

I wouldn't have thought to do ribs, but this may be something I do in the future. Thanks for the idea.

My pulse rate dropped a few notches reading through your post, Jeanie. Will definitely have to try ribs on the open pit when I go camping, just not at the higher elevation spots.

Another inspiring cook, beautiful ribs! And what a peaceful setting. Down here the days are starting to get a little shorter and the evenings are cooling down so I'm really looking forward to firing up my Santa Maria ranch grill - gonna have to try some old school spares.

Thank you SD, Phu, Billy, Garrett and Dave!

Great cook out for sure with superb food and that fantastic view.
Never tried open pit ribs, now it has moved to the 'have to try soon' list!
Awesome post Jeanie.

Thank you Joe! I love to cook beef ribs on the fire too, they are my favorite.

Hope you give them a try sometime!

The only thing I see wrong is the pictures, is that you need a bigger knife to stir the beans!

Awesome cook yet again Jeanie.

lol Thank you!! I love that knife. :-D

The BBQ Goddess does it again! 8)

Great Looking Grub Jeanie.

TIM

Tim, you make me blush... Thanks for the kind comment!

After seeing that, I'll have to finish off the rest of the salmon.

BTW, that stuff is DA' BOMB! Thanks again, Sweetie!!!

Looks like you had a lot of fun out there and ate good to boot!

Pat thanks! Glad the salmon made it to ya. :)

Thank you Peeps and J-Rod!! :-D

Awesome. I love the mental picture you paint. It's not just photos of food, it's the whole thing, mood and all. Good stuff Jeanie. Wonderful images to view while I sit here at work thanks!

Bob thank you! It was pretty peaceful out there most of the time. The air was cool and crisp in the evenings so the fire really felt good! I stayed pretty close to it. :)

Thank you Dadeo, Jason, Matt and Jason...you really do need to find a lake like this Jason. :-D

nucornhusker, I'm ready for chili and winter foods too! Thanks! :)

Thank you Hamilton and Big V! :-D

That does it! I'm gonna find me a tractor rim at the very least. What a great cook, and I mean that both ways.
Jim I would send one to you if I had an extra. Thanks friend!

Moose, glad to hear you enjoyed the pics.. Thank you!!

Dave thanks so much. Hope you give them a try sometime.

Thanks again for the kind comments everyone!

Lovely. You do realize that you have made all of the people debating foil vs. no foil, hot and fast vs. low and slow, and the other debates on ribs look very silly.

lol Thanks dadsr4! I avoid the debates and just cook em how I like em. :)

Thank you Big M1ke and Bob!

Love everything about this Jeanie!
When I raised my first two kids we went camping all the time.
I still have all my camping gear.
I'm much older now and I'm on round two with kids.
They are 7, 11 and 12.
This inspires me to start camping again.

I have a firepit in the backyard and a piece of grate I can use to get a good distance from the fire for some good open pit cooking. Time to try some open pit at home!

I make these a lot when camping. Another easy meal.

Soaked the pintos overnight then put them on the fire after breakfast and let them simmer all day.

Brushed the rack of spares with bacon drippings, seasoned with a bit of salt and pepper. Then put them on the low heat side of the fire.

Rotated and flipped the slab about every 30 minutes for even cooking...
added a log of wood when needed.

Sometimes I foil after getting some color on the slab but I kind of like more tug to my ribs so I didn't this time. I like campfire ribs kissed by the flame. :)

The ribs took about 6 hours to get the pull back that I was looking for.

I did brush with a spicy Q sauce at the end of the cook.
I almost forgot to get a plated pic.
