Made up some Tamale Pie for dinner.

3 carrots, 1 med onion and 8 ounces of chorizo, browning in a cast iron skillet with 2 TBSP olive oil. And a pinch of kosher salt.

Chopped up 5 cloves of garlic and a chipotle, added to the party after 8-10 minutes of browning.

Added in a can of diced tomato and 2 cups of chicken stock. Reduced the liquid by half.

Added in 1 TBSP fresh chopped Oregano and 1 pound of pulled pork, that I previously cooked up.

Enjoy!

Nice looking feed, is that a corn bread Batter on the top?

Yup. Just dollop it on the top and try to spread it in an even layer. In hindsight I should have made up more batter so it would have covered everything but I haven't made this before. Next time I guess. It was very good.

Good idea but the finished product looks too dry. I see not a drop of moisture seeping out. Would you add more liquid next time or was it moist enough?
