Beautiful choice brisket trimmed and ready for the pit. 13 lbs before trim. Not even a half lb needed trimmed. No plug fat at all. Thick floppy flat too. Gotta love when you find a nearly perfect brisket for $1.67/lb. Running overnight, and wrapping in the early morning to slice and serve for lunch tomorrow.

I can't remember the last time I only trimmed half a pound off a brisket.

$1.67! That kills me. I just paid $6.90/lb at Restaurant Depot here in NY. The same brisket was $3.60 two months ago. Enjoy, looks like you got a great one.
