I've been using a basic smoker for a few years now. I acquired this large trailer grill / smoker as part of a restaurant purchase. Using propane for grilling is straightforward enough, but unsure of where to begin for smoking. I would appreciate any guidance regarding what the proper terminology is for this style of smoker and where to find basic instructions and tips for using this style of smoker. My feeble google searches at least brought me to the BBQ Brethren!
