Default Grilled Cactus....and some jelly

I don't think I've posted this here before.
Not sure if there are any Brethren who would be interested in salad and jelly. lol

Sorry for so many pics!!


in my pasture...



prickly pear cactus...











I hold them with pliers and scrape the thorns off with sharp knife...



remove thorns..






corn, cactus, black beans, shrimp, scallions, jalapenos..



brush with oil and onto the grill..


shrimp on grill too..







slice grilled cactus...



make dressing..
1/3 cup red wine vinegar, 2/3 cup oil, minced garlic, 1 TBs dijon mustard , onion powder, salt and pepper to taste



make salad, grilled cactus, corn, scallions, tomatoes, onion, black beans...




Grilled cactus, shrimp and corn salad...






make jelly with cactus fruit..










simmer fruit in small amount of water



strain...





sugar, pectin and lemon juice





cactus jelly..









Just something different...

I use Nopalitos (cactus leaves) in my chili. Love it!

Thank you! The fresh ones are similar to a green bean. You can get canned or pickled ones in the stores here. I rinse the pickled ones before using to get rid of the brine flavor.
Thanks about the jelly too. I like it on hot biscuits. :)

Cool post, and salad/jelly looks awesome. Nopales (cacti) are in all the Mexi grocery stores here, I'm gonna try some. Never really knew what to do with those.....

How do you know when they are done? Do they get really soft or...???

Thanks for the taste report on those cactus. Saw some in our local farm market yesterday but had no clue how to prepare them. Nor did I know what they taste like.

Growing he in Phoenix we had prickly pear cacti everywhere. Never had a clue how to make the jelly. I have to give this a try next time i'm down there.
