Default All night packer cook

Up since 1am with a packer on my UDS. Nothing like the smell of hickory at 2:50 in the morning.

Put a breakfast fattie on at 6 and it is ready to eat. The brisket is still humming away at 250 degrees. Next I put on the meatloaf and then the abt's.

The packer is looking great. The fattie was awesome as it always is. Went with a slight variation of the bacon explosion sliced and sitting on a biscuit. Made for a great breakfast. The meatloaf is now on the smoker and in an hour I can release it from the foil pan to better absorb the hickory until it is done.

Yes, the reason for babysitting the UDS is due to the photo below. I emptied that rain gauge an hour before I fired up the UDS.
