Spare Ribs - Heritage Pork

Cooking some heritage pork ribs. These ribs are from a mangalista breed pig. Found a pretty nice ranch in Florida that raises mangalista and Berkshire pigs. I have cooked some Berkshire ribs before and they were awesome. Looking forward to trying these bad boys. :-D

The name of the farm is pasture prime waygu. It is located near Ocala. They sell there products at the farmers market in the Villages every Saturday. They also do tours of there farm where they have pigs, waygu cattle, and milk fed free range chickens. They have a website, I would just google the name above and there website should come up.
 
This is after 2 hours in the smoker at 250. They are ready to be wrapped and put back on the smoker.

Finished product.

The meat was really good. They were seasoned with simply marvelous sweet seduction and pecan rub. Then finished with some blues hog original and Tennessee red sauce.

My only complaint is that they really do not have a lot of meat on the bone.
