Default Pork Roast, Eggplant, and a Salad

Fired up the Performer to smoke a small centerloin pork roast to 145 using lump and apple wood, then grilled some eggplant. With a side of a fresh leaf lettuce salad from the garden, we had an easy yet elegant dinner Friday night. I must say the pics don't do it justice. The sauce was a homemade raspberry chippolte BBQ sauce. Saturday night it was back to the performer to grill a couple of T-Bones.

Neil--wife is asking how to cook eggplant--are yours halved and covered wit cheese and then tomatoes only?Also-is your wine glass stainless? how does wine taste in that? thanks

Maxwell, I slilce the eggplant 1/2" thick and brush both sides with olive oil. Season the slices with granulated garlic, S&P then grll seasoned side down over direct heat for 2-3 minutes. Flip the slices, add mozzarella or provolone cheese, top with tomatoe slices sprinkled with basil and grill with cover on till cheese is melted (another 2-3 minutes). The wine goblets are made of pewter and it does not affect the taste IMHO.

Nice. Really like the steak. Since the Mrs is pregnant, she doesn't want steak, because she can't have it like yours. Suppose to eat well done meat. I'll be sure to show her your pics!
