I have some Cherry wood that I'm splitting up for my drum. I haven't had real good luck with cherry, but really good with apple. Here is an observation. When I split my cherry wood chunk, I noticed that the inside is soft, as in I can flake it off with my finger....is the wood rotting? Should I not use it?
 
Interesting thing about cherry... I can taste whatever gives cherries their flavor in food smoked with cherry wood. That substance must survive heat pretty well!

I particularly like it for salmon and hard boiled eggs.

I agree with bludawg that yours is rotting and I would not use it.
