Buckboard Bacon
I took a boston butt and applied some Morton's tenderquick cure to it. Rubbed it in good then put in a big ziplock bag and let it set in fridge for ten days. I turned it a few times. Smoked it over cherry wood until internal of 150. My buddy, Gepetto, sliced it for me on his Hobart slicer.
Came out really good, IMO!

It's a lot like Canadian bacon or "country ham". Though not as salty as the country ham.

probably more like a cross between canadian bacon and country ham ? has nice smoky flavor. All i know is, it goes great with the fresh country eggs that I get!
