This one is for the guys here in Sacramento I need to find a place that sells Morton Tender Quick for the recipe I have looked at Raleys, Safeway and Longs and even Cash and Carry with no luck. I wanted to get started on the cure process this week and can't seem to find the stuff except on a web site. Bigdave |

It was hard to find here in LA area...Prof. Salt turned me on to an Italian market by Santa Anita race track for mine. If IGA does not have it try places that make their own sausage, they may carry it.

I found it a Corti Brothers for @ 20$ a bag so I will go get it at lunch tomorrow and get busy with my brisket Friday night.
