Cooked the following meal for the office today.

Last Night

Combined some ground beef and ground sausage with some eggs, cream, and seasoned panko bread crumbs. Stuffed with mozzarella cheese.

Got the Kamado Joe to temp.

Cooked for around 45 minutes. Let cool and put in fridge over night.

In the mean time whipped up some Mac and Cheese, Mashed Potatoes (not pictured) and an ice cream cake (pictured above).

Today

Got to the office and put the meatballs in marinara sauce and let them soak in the sugo all morning.

Reheated the sides and lunch was served.

How do you make an ice cream cake?

Crust

Crumble 24 Oreo Cookies with a couple of tsp of butter. Line bottom of a greased 9x13 pan with the cookie mixture.

Ice Cream Layer

Top the cookie layer with 1/2 gallon of vanilla ice cream. Sprinkle chopped nuts over the ice cream layer and put in freezer while making the sauce.

Sauce

Melt 4oz bar of German Chocolate with 5oz of evaporated milk. Add 2/3 cup of sugar, stick of butter, and a pinch of salt. Stir until mixture is fully melted and combined. Remove from heat and add a few drops of vanilla extract. Let cool to room temp.

Next Layer

Once cooled top the ice cream layer with the chocolate sauce.

Topping

Top the chocolate layer with a layer of cool whip.

Put in freezer until ready to eat.
