Tri-Tip was on sale...should grabbed more. Was debating between the joe or sous vide(did sv last time and was superb). Decided on the joe since I had a pork loin chunk that I cured for some ham already out there.

Seasoned one half with oakridge santa maria and the other with black ops. Threw it on the joe at 225 with a chunk of post oak.

In the meantime I made some french bread. I need to work on my bread game.

Pulled it off at 110 and seared it off.

Put it onto a roll slathered with some garlic mayo and topped with fried onions/peppers/mushrooms. I put pepperjack on my half, wife was feeling the cheese.:crazy:

It was very tasty. Wifey kept repeating that as well. Love me some tri-tip!


Here was the pork loin cured with some tenderquick/maple syrup. Cold smoked it for a couple hours with some maple/apple/cherry and then hot smoke til 145 IT. Going to slice it up for some ham sammies for lunch.

where do you find tri tips? I've looked high and low around here and never see them. Only place I've ever run into them was at trader joes, but they usually only have the pre marinated ones.
 
AceQue, they are gradually being seen all over. Used to be only a California thing but now, I can get nice tri tips at my local HEB here in Houston area. Just hang in there.
 
Looks good. I do pesto pesto mayo. Next time I'm gonna throw on some sautéed peppers, onions and shrooms.

This is where they have them. They don't always have them but I get their email blasts and usually have them on special. Could always custom order to I imagine.
