Any reason you want a multi-tasker, instead of multiple cookers? I can't say anything about the AZ outfiters, other than they look cool. In my experience though, when you get into the multi-taskers, you get something that does everything okay, and nothing great.

I have been to David's shop in Tucson a couple of times. Everything they build is top notch and he puts a lot of effort in his designs. If I was only going to have one cooker that would grill and smoke plus offer all the joys of tending a stick burner and the ability to set it and forget it I would choose the Boothill with the firebox and pellet options. I love their Santa Maria grills and definitely have one on my bucket list.

I like the Boothill a lot, wouldn't need the pellet, already have one of those.

Dave at AZBBQ is a madman when it comes to customizing. Tell him what you want and he'll do a Frankenstein job for you and turn out a quality pit.

That said...

I too prefer specialized use equipment. Dedicated smoker and dedicated grill. Like multifunction office equipment... It's cool and all, but everything suffers a little compared to dedicated equipment.

I'd go with a Weber Kettle for a do it all.

If you're cool with the Sedona + SM Grill concept, why not just go with a WSM + Kettle + Custom Built Table to mobilize both simultaneously - for a fifth of the price!

But I'm partial. Happy hunting brother.

I like the Sedona, for the fact that you have two different cookers and you can cook two different temps or methods at the same time
