Price for a prepaired Brisket?

I'm cooking three Briskets and a half a dozen slabs of ribs. My question is, what is the going rate for a 12lb prepaired Brisket? or is there a formula that full time caterers use? It will be delivered ready to be reheated.

Strickly just for reference Famous Dave charges $15.99 a pound where I live and $12.99 at the Long Beach location according to their online menu.

If you sell by the lb, you must have a certified scale.

$15/lb or 3x total cost of brisket.

We charge $12/lb bulk for brisket at our farmers market. For whole cuts, we are at least 3x cost.

15 per pound finished product. As far as the certified scale goes, depends if weights and measures is up your arse.

Doing $12 per pound out of the Hut - sliced with a combo of wet & lean (about 60% lean/40% wet)
