You guys are totally welcome, it's a bit novel letting the gluten do the work rather than working(kneading) but that's what gets the lovely chewiness.
Sneaky using so much yeast to get faster development!
I urge you to use this, man it is special, the guy who came up with it was a genius(New Yorker but well forgive him that )

Man, just typing this makes me want to make another pie...
