Default Venison sausage recipe?

I've been using the same recipe for years. I'd like to try something new this year. Anybody have a winner they are willing to share?

I know Brian, 1 oz jalapeno per lb.

Throw in small cubes of monteray jack cheese along with the jalapenos. The batch I had made, they used about 1 inch cubes. Too big, need to be 1/2 that size or less.

I would like to smoke some sausage also, Jorge could I get a copy of your recipe?

My only down fall is that I do not have a meat grinder/stuffer, but I am planning on getting one at some point.
